Jeers to Daniel Humm, the head chef of Michelin-starred restaurant Eleven Madison Park, who announced that the highly regarded restaurant would begin serving animals—including lobster, oysters and duck, according to its own press release—beginning in October. The restaurant began as a meat-focused fine-dining restaurant, but went fully plant-based in 2021—citing the environmental reasons impacts of animal agriculture. The fully vegan menu received rave reviews from food critics, vegans, and the fine-dining crowd alike, and has proven that vegan cuisine is only limited by the imagination. Humm claims that having a fully vegan menu “excludes” people and that the restaurant is suffering financially, which is believable given that the full-tasting menu starts at $365 per person. While Friends of Animals generally supports restaurants that make an effort to cater to vegan diners and aren’t necessarily fully vegan, we think Daniel Humm would be more compassionate—not to mention realistic—to figure out a way to make his exorbitantly priced restaurant more affordable, which is how Eleven Madison Park actually excludes diners. We urge people to contact the restaurant and ask them to reconsider this decision—which disrespects animals and the environment.
