Sweet Corn Bread


1/4 cup (1/2 stick) vegan margarine
1⁄3 cup Florida Crystals natural sugar
Ener-G Egg Replacer (mix according to box instructions to make equivalent of 2 eggs)
1 cup water
1 cup cornmeal
1 cup all-purpose flour
11/4 teaspoons baking powder
1 teaspoon salt


Heat oven to 400 degrees F. Grease a 6-by-9-inch baking dish. Cream margarine, sugar, and egg replacer blend in medium mixing bowl. Add water, cornmeal, flour, baking powder and salt. Pour the mixture into the prepared baking dish. Bake for about 20 to 25 minutes, until top is golden and until tester comes out clean. Serve warm.
