Scrambled Tofu

Ingredients:
1 pound extra-firm tofu
2 tablespoons olive oil
1 onion, diced
1 zucchini, thinly sliced
1/2 red bell pepper, diced
2 cloves of garlic, minced
1 tomato, diced
1 teaspoon dried basil
2 tablespoons tamari
1 teaspoon ground cumin
1/2 teaspoon turmeric
1⁄8 teaspoon cayenne pepper
A pinch of freshly ground pepper 1/2 teaspoon paprika
1/4 teaspoon salt

Preparation:
Drain and crumble the tofu. In a large skillet, heat oil, and add tofu, onion, zucchini, red pepper and garlic. Stir-fry for about 3 minutes.

Add tomato, basil, tamari, cumin, turmeric, paprika, salt, and black and cayenne pepper. Stir-fry until tomatoes are heated through.

Serve immediately, with fresh salsa on the side.
