Serves 4-6

Ingredients

1+ Tablespoon of Olive Oil

2 lbs. chopped zucchini

2 garlic cloves, chopped

1 large Vidalia onion, chopped

3 cups of vegetable broth

1 cup water

1 bay leaf

¾ cup vegan creamer

Salt and pepper

Vegan Parmesan garnish

Preparation

Heat olive oil over med-high heat.  Add garlic and onions and cook 3-4 minutes.

Add chopped zucchini, broth and water and bay leaf.  Bring to a boil.  Cover and reduce heat to medium.  Cook 15 – 20 minutes

Remove bay leaf. Use immersion blander.  Add salt and pepper to taste and stir in vegan creamer.

Ladle into bowls and top with ground pepper and shredded vegan Parmesan.
