Serves 4-6
1+ Tablespoons olive oil
1 chopped onion
4 chopped cloves of garlic
1 red pepper and 1 yellow pepper, chopped
2 carrots, chopped
Sauté all of the above for several minutes. Then add:
3 chopped tomatoes
½ tsp. turmeric
1 tsp. basil
1/2 tsp. oregano
1/4 tsp. thyme
1 tsp. red chili flakes
1/4 tsp. black pepper
1+ tsp. salt
¼ tsp. chili powder
Continue to sauté.
Then add:
1 cup washed red lentils
5 cups vegetable stock
5 oz. baby spinach
Simmer covered 15-20 minutes. Blend half or more of mixture with immersion blender.
Add baby spinach and cook 5 more minutes.
