1 1/2 cups washed lentils
6 cups salted cold water
2 large, chopped carrots
1 medium chopped onion
2 stalks celery, chopped
2 tablespoons olive oil
2 cups or more of canned tomatoes
Sea salt
Ground pepper
PREPARATION
Cook lentils in water for 45 minutes in a pan partially covered with a lid. Add vegetables, oil, tomatoes and salt and pepper to taste. Simmer for 30 minutes. Stir often.
