Serves 4 or more

Ingredients

1 3/4 cups of purified or spring water

1 3/4 cups of organic sugar

2 cups of fresh lemon juice 

4 tablespoons of lemon zest

Preparation

In a saucepan, add the water and sugar and cook together just long enough for the sugar to dissolve. Stir.

Pour the lemon juice into a bowl.  Add the sugar water mixture and lemon zest.  Cover it and place it in the refrigerator overnight.

Pour the mixture into the insert of your ice cream machine and freeze according to manufacturer’s instructions.  My ice cream machine took about 30 minutes.
