Makes 12-15 fritters

Ingredients

1 cup all-purpose flour

1-1/2 teaspoons baking powder

1/3 teaspoon salt

2/3 cup water

2 cups of fresh cut corn

2 minced scallions

1 jalapeño pepper (deseeded or not depending on how much heat you want)

Preparation

Stir together flour, baking powder and salt in a medium sized bowl.

Add water and then fold in 2 cups of fresh cut corn.  Add 2 minced scallions and a finely chopped jalapeño pepper.

Heat grapeseed oil until hot and spoon in corn fritters to form 3 to 4-inch patties.  Cook until  brown. Turn once and drain on absorbent paper.
