Rich, Spiked Vegan Not Nog
Serves 8 (2 quarts)
Ingredients:
21 oz. soft silken tofu, drained
1 cup vanilla coconut milk (So Delicious brand)
1 cup vanilla almond milk
1 Tbs. plus 1 tsp. vanilla extract
1/4 cup organic sugar
2 Tbs. light brown sugar
1/4 tsp ground turmeric
1/2 cup Mount Gay rum (optional)
Fresh grated nutmeg, for garnish
Preparation:
Blend tofu, non-dairy milks, vanilla, sugars and rum in blender until smooth. Chill 2 or more hours, or overnight. Serve sprinkled with nutmeg.
