Caesar’s Wife Salad
Makes 1 quart of dressing
Recipe from Bloodroot Restaurant
Place 1 pound tofu in food processor. Add 2 ½ tablespoons red miso, 4 small peeled garlic cloves, 3 ½ tablespoons nutritional yeast and 3 tablespoons tamari. Process.
Combine 2 cups olive oil and 1 cup grapeseed oil.
Squeeze ½ cup lemon juice. Add lemon juice to processor, turn on machine, and gradually add oils, pouring slowly.
Season with dash of Tabasco and fresh ground pepper. Thin with ½ cup water, or as needed.
Tear Romaine lettuce leaves into pieces for each diner. Top with dressing and toasted croutons.
